For me, summer is such a fun time to experiment with new recipes. Our days are less structured and my daughter loves to join me in the kitchen to create new, delicious foods and drinks.
Since we don’t do traditional sodas or sports drinks, summertime is a perfect time for my bubbly, healthy Hibiscus and Rose Hips “Soda.” I call it a soda because it is fizzy but that’s because it is fermented. You will get the benefit of microbiome-supporting probiotics from this drink as well.
It does need some time (2 – 4 days) so it is a great home “science project” that the whole family can watch as it ferments.
Ingredients
- 1/4 cup Dried hibiscus flowers
- 1 tbsp Dried rose hips
- 1 1/2 tsp Lemon juice
- 1/2 cup Evaporated cane juice
- 1/2 cup Water kefir grains (or 2 packets of kefir starter by Body Ecology)
- 1 Gallon filtered water
- 1 Gallon glass mason jar
Directions
Pour the hibiscus, rose hips, lemon juice, evaporated cane juice, water, and kefir grains or kefir starter in a large jar.
Add filtered water and fill within 2 inches of the top of the jar.
Screw on the lid and place in a warm spot for 36-48 hours .
Once complete, strain out hibiscus, rose hips, and kefir grains (if used) and transfer to new clean jars and screw on lid.
If the drink is not as fizzy as you’d like, place it in a warm spot for 24-48 more hours, then place it in the refrigerator.
